A Western Speakeasy Just Opened in Downtown Canby — And Yes, There’s an Adult Lunchable

A Western speakeasy. In Canby.

That’s not a sentence you expect to read, and it’s definitely not something you expect to find tucked into a small downtown—but here we are.

Sip & Slice just opened on North Grant Street, and it’s leaning fully into the concept. Western atmosphere, dim lighting, smoky craft cocktails, canned local beers, and a food menu that somehow pulls off both smoked brisket and a pork belly bánh mì.

Those two things should not work together on a menu.

They absolutely work together on a menu.

The Kind of Place Canby Didn’t Know It Needed

Downtown Canby has its staples. The reliable spots. The places you rotate through because they’re good and familiar.

This is not that.

Sip & Slice feels like a deliberate shift—something designed to break the routine and give people a reason to go out instead of defaulting to the usual.

It’s themed without feeling gimmicky. Western without being over-the-top. The kind of place where you walk in and immediately feel like it’s different from anything else nearby.

And that matters more than it sounds.

Because small downtowns don’t just need more businesses—they need variety. They need places that create energy, that give people a reason to stay a little longer, have one more drink, order one more round.

The Menu Detail That Has Already Won Me Over

There is something on the menu called an “Adult Lunchable.”

It is, essentially, a charcuterie board.

I have not even been yet, and I am already fully sold on this idea.

It’s the kind of small, clever detail that tells you a lot about the place. They’re not just putting together a menu—they’re having fun with it.

And then there’s everything else.

Smoked brisket. Pork belly bánh mì. Shareable plates. Bar food that isn’t just an afterthought but actually part of the experience.

That mix—playful but still done well—is harder to pull off than it looks.

The People Behind It Matter

Sip & Slice isn’t coming out of nowhere.

The owners are the same team behind Church of Smoke BBQ at the Canby Beer Library. If you’ve been there, you already know what that means.

The smoked brisket isn’t a gamble.

They know what they’re doing when it comes to food. And now they’re bringing that same level of quality into a completely different kind of concept.

That combination—strong food and a strong identity—is what gives a place staying power.

Who This Place Is Actually For

This isn’t just another casual stop.

This is a date night spot.
This is a girls’ night spot.
This is a “we need somewhere new to go” spot.

It’s for people who like Canby—but are ready for something different within it.

It’s also for the people who usually leave town for a more elevated or unique experience. Now, there’s one a lot closer to home.

Why This Opening Matters

New businesses open all the time.

But not all of them shift the feel of a place.

Sip & Slice has the potential to do that—because it’s not just filling space, it’s adding something new to the mix. Something more experiential. Something people talk about.

That’s how downtowns evolve. Not through one big change, but through small, distinct additions that slowly build momentum.

When You Can Go

They’re open Wednesday through Saturday, which makes it a perfect midweek break or weekend plan.

And if you’re the type who likes trying places early—before everyone else catches on—this is your window.
